When my 9yr old daughter Emily saw my last blog dedicated to her big brothers meal, the jealousy kicked in! So of course, tonight I let her cook dinner, and took lots of pictures, directed by Emily of course!
In the fridge and pantry I had some sweet potatoes, spinach and pork chops that needed to be cooked. So dinner tonight is pork chops, roasted sweet potatoes with spinach, corn bread muffins and onions from the garden!
I cut the potatoes up, and Emily drizzled olive oil, salt and pepper and placed them in the oven on 450 for about 20 minutes on the 2nd from top rack, after 20 minutes we placed the spinach for about 5 minutes, stirring a couple of times.
Emily mixed the Jiffy brand corn muffins, and pured them in muffin cups, and cooked as directed!
